Quinoa “Waldorf” Salad

Lunch = Red quinoa, chopped onion/celery/apple, sesame oil, apple cider vinegar, onion salt. Simple. Mmmm.

Made this morning, had for lunch. This was inspired by these two
recipes, but drastically simplified.

Chicken and Quinoa Waldorf Salad with Creamy Maple Vinaigrette

Quinoa Salad with Apples, Fennel, Celery and roasted Almonds

You can probably figured out what I did from the tweet, but basically
all ingredients were to taste, and I didn’t measure anything other
than the quinoa and the water I cooked it in. (I used 1 cup and a
tablespoon of quinoa, brought to a boil for five minutes in 1.5 cups
of salted water, and left to sit overnight.) Then it was one apple,
almost half a bunch of celery, a couple stalks of green onions, etc.
