Fusion Chicken Salad

This is one of those recipes I come up with based on what is in the kitchen that needs to be used up. Also, because I didn’t have what I would normally use. Still, I don’t expect to be unhappy using this up the rest of the week. 😉

FUSION CHICKEN SALAD

1 & 1/2 pounds prepared chicken (cooked, skinned, boned, cubed)
3/4 C mango, cubed
3/4 C sweet cherries, pitted & quartered
3/4 C walnut chunks

Dressing: 1 & 1/4 C mayonnaise
1 T apple cider vinegar
1 T honey or maple syrup
1 & 1/2 t tarragon
1 & 1/2 t mint
1 t onion salt
1/4 t curry powder The usual – mix all.
