The result of a trip to the Farmers Market with my friend Cathy combined with hunger and pure inspiration. It was absolutely delicious. I had to write it down and take notes, so I can share. Enjoy!
SALAD1 sm-med head broccoli, chopped into florets
2 apples, chopped
1/2 onion, minced
1/3 C sunflower seeds DRESSING 1/3 c mayo
1T ume vinegar
1T cider vinegar
1/4 t allspice 2 t honey Toss, and serve. Chilling is optional, unless there are leftovers. Makes four servings. If you want this as a main dish, you might add cubes of ham or snippets of prosciutto, perhaps some hard boiled egg or cheese cubes?
